We often think of ready meals as being laced with salt and sugar which may be true of some cheaper version of a ready meal, but in this blog, we explore three homemade ready meals you can enjoy seated at your reclaimed wood furniture without the guilt. Tasty and delicious without the salt and high sugar or fat content, make these ahead of time so that when National Lazy Mom Day comes around, you really can kick back and enjoy the day doing absolutely nothing.
Chicken & Cheese Quesadillas
This recipe serves four and is very, very healthy with only 476 calories per quesadilla. Sit on your leather dining chairs and enjoy with an icy cold drink.
You will need;
*Enough cooked, shredded chicken to generously fill each tortilla – 2 plump, chicken breasts should do it
*Grated cheeses of your choice – try a punchy cheddar, applewood or Monterey jack cheese
*150g low-fat Greek yoghurt
*150g tomato salsa (shop-bought will do!)
Assembling them is easy - you just need to:
1.Place a dash of olive oil in the bottom of a large frying pan and place a tortilla on top
2.Layer on your filling of chicken and cheese
3.Place the other tortilla on top and flip over to cook on the other side.
4.When ready and the chicken is heated through, turn onto a plate, cut into four wedges and serve with a generous dollop of salsa and yoghurt. Eat at the reclaimed wood dining table or relax back into the modern armchair in the living room, enjoying a film as you do so.
If you love the convenience of pizza, then this version smothered in pesto will become your new favourite on Lazy Mom Day and beyond. Our tip is to use the best quality pesto for a superior taste or make your own.
You will need;
*Shop bought pizza bases
*170g basil pesto (or use the tomato pesto if you prefer)
*A generous helping of sweet, ripe cherry tomatoes, halved
*100g shaved parmesan cheese
To assemble, you will need to;
1.Heat your pizza stone if you have one or heat the oven to around 180c
2.This recipe makes four, small pizza
3.Prick the pizza bases all over with a fork – you can brush them lightly with olive oil if you like – and then place in the oven for around 7 to 8 minutes.
4.When slightly golden, pop them out of the oven and smother them in a generous layer of the pesto, adding the cherry tomatoes on top.
5.Finish with the shavings of parmesan – you can use any cheese you like – and then pop back in the oven to warm through.
6.Slice and share, or retreat from the kitchen whilst the rest of the family bring your lunch to you!
Sweet Treat – Cake in a Mug
When you need a sweet hit, this cake in a mug is the perfect solution.
You will need;
*3 level tbsp of self-raising flour
*3 level tbsp of granulated or caster sugar
*2 level tbsp cocoa powder
*A pinch of baking powder
*A pinch of salt
*3 tbsp milk
*3 tbsp sunflower oil
*A dash of vanilla extract
*3 tbsp chocolate chips – milk, dark, white or a mix!
1.In a large microwave-safe mug, mix the dry ingredients.
2.Add the milk, oil and vanilla extract, making sure it is lump-free and well blended.
3.Stir through the chocolate chips.
4.Microwave on high for 90 seconds but don’t overdo it as it’ll become dry and inedible.
5.CAUTION – the cake in a mug will be VERY hot, so leave to cool for two or three minutes and then retreated back to your leather armchair, a novelin hand.
